Ground Beef Taco Salads

Raise your hand if you like meals that can be cooked in one pan and take under 30 minutes to cook. WE DO, WE DO! That is why this is a staple in our house. Gabe and I have this conversation about every 4-5 weeks:

Rachel: “I need to go to the store on my way home from work, what should we make for dinner?”
Gabe : “Mmm, something easy. Taco salad?”
Rachel: “Nah, I want to try something different. I feel like we just had that.”
Gabe: (rolls eyes) “Whatever you want, Rach.”
Rachel: Comes home with taco salad stuff.

We eat it so often because it comes together quickly, makes great leftovers, and is delicious. We topped it with a cilantro lime dressing but you can also use your favorite salsa. The secret to the taco meat is to simmer it in a little bit of water when you add the seasoning mix. The mixture absorbs the water which keeps it from drying out. We love pretty basic taco salads but the sky is the limit as far as toppings go. What are your favorite things to add to your taco salads?

Taco Salad Bowl

Quick and easy weeknight meal that comes together in under 30 minutes.

Ingredients

  • 2 lbs ground beef
  • 1 medium onion, diced
  • 4 cloves garlic, finely chopped
  • 1 jalapeno, seeded & diced
  • 1/2 cup cilantro, chopped
  • 1-2 TBSP avocado or olive oil
  • 3/4 cup beef bone broth or water

Taco Seasoning

  • 1 TBSP chili powder
  • 1 TBSP granulated garlic
  • 2 tsp salt
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp pepper
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp ground mustard
  • 1/2 tsp red chili flakes

taco bowl suggested ingredients

  • romain or red leaf lettuce, chopped
  • tomato, diced
  • avocado, diced
  • red onion, chopped
  • cilantro, chopped
  • green onion, chopped
  • salsa or a cilantro-lime dressing

Instructions

  • In a large cast iron pan, heat oil over medium-high heat. Add onion and cook for 3-5 minutes until soft and translucent
  • Add garlic and cook 30 seconds until fragrant
  • Add jalapeno and cook 1-2 minutes until it begins to soften
  • Add ground beef and break apart with a wooden spoon. Cook 7-9 minutes until just cooked through.
  • Reduce heat to medium and pour 3/4 cup broth or water into the pan along with the seasoning ingredients (roughly 4 TBSP of seasoning). Stir to combine. Let meat mixture simmer for an addition 3-7 minutes or until the liquid is reduced by about 80%
  • Assemble taco bowls and top with the meat mixture
  • Eat and enjoy
