Just like summer, our Watermelon Week is coming to an end and we thought we’d go out with a bang by giving you a boozy little treat! In the name of “research” Gabe is quickly becoming quite the mixologist. He makes the perfect Old Fashioned and his traditional margarita is bomb! So when I said we should do some kind of watermelon cocktail to round out Watermelon Week he was all over it. Guys, he crushed it! If you have a BBQ, pool party, or mellow evening at home on the couch watching crap summer TV then you need this recipe!
We don’t really like sweet drinks, they make our molars hurt and give us awful hangovers. These margarita have a touch of sweetness but the spice from the jalapeno and the tang keeps that sweetness in check. We top our margaritas off with a couple ounces of lime or orange flavored sparkling water (such as Spindrift, La Croix, or Waterloo), and we find that the carbonation adds a little something special to drink. This mix makes about 40-42 ounces which is enough for roughly 6-7 margaritas. We may or may not have “tested” an entire batch one night while listening to the playlist we had going at our reception. We also may or may not have been 10 days into our attempt at sober August. Totally worth it!

Watermelon Jalapeno Margarita
Ingredients
- 1/3 large watermelon, rind removed and cubed (about 7-8 cups)
- 1 jalapeno, deseeded and roughly chopped
- 3 limes, juiced
- 1 lemon, juiced
- lime or orange flavored sparkling water (such as Waterloo, Spindrift, or La Croix)
- tequila blanco
- limes wedges and salt for glass rim
Instructions
- Add the watermelon to a large blender and process until pureed. Remove to a bowl or pitcher
- pour the lime juice, lemon juice, and jalapeno into the blender and process until pureed. Add to the watermelon juice and stir to combine. *If you blend the jalapeno with the watermelon it turns an ugly brown color. It tastes the same but doesn't look as appealing
To Serve
- To salt the rim: pour salt on a small plate and spread into a thin circle a little larger than the rim of the glass. Rub a lime wedge around the rim of a 12-16oz glass and dip the glass in the salt. Fill the glass half way with ice
- add 2 oz of tequila
- add 6 oz of mix
- top with 2-4 oz sparkling water
- stir to combine and then enjoy (responsibly)
