Totchos: Tater-tot Nachos

Yep you read that right! We upped our nacho game and created what we like to call Totchos. Sub out chips for tater-tots and BAM! you’ve got yourself a plate of Totchos. The toppings are entirely customizable to your preferences so while we do give suggestions they are merely there to get your creative juices flowing. Kids only like cheese? Perfect. Want to add salsa, corn, and cilantro? Well, you do you! These are incredibly easy to make and even more delicious. We use Siete Queso Dip when we can get our hands on it (it’s hard to find) but if we are out then we just melt shredded cheese instead.

Totchos

Totchos are nachos but instead of chips you use tatertots and they are as delicious as they sound! These whip up in no time and are great for kids, adults, sports enthusiasts watching a game, pregnant women with serious cravings, or just those wanting to mix up their weeknight meals.

Ingredients

  • 2 lbs ground beef
  • 1 package frozen tater tots
  • 1 small onion
  • 2-3 cloves garlic, minced
  • 4 oz can diced green chilis, strained Optional
  • 3-4 TBSP taco seasoning to make your own see recipe below
  • 3/4 cup water

Taco Seasoning

  • 1 TBSP chili powder
  • 1 TBSP granulated garlic
  • 2 tsp salt
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp pepper
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp ground mustard
  • 1/2 tsp red chili flakes

Suggested Totcho toppings

  • Queso dip or shredded cheese We prefer Siete queso dip but it can be hard to find
  • shredded lettuce
  • diced tomatoes
  • diced onion
  • sliced jalapeno
  • diced avocado
  • sour cream

Instructions

  • Cook your tater tots according to the package instructions
  • Meanwhile, preheat a skillet on the stove over medium-high heat and add 1 TBSP oil
  • Add your onion and cook for 2-3 minutes until they are translucent
  • Add your garlic and cook for 30-60 seconds until fragrant
  • Add your ground beef and break apart with a wooden spoon. Cook 7-9 minutes until browned and cooked through. Stir occasionally
  • Drain any excess cooking liquid and discard. We put ours in a small mason jar and allow it to cool before pouring it in the trash
  • Add (optional) diced green chilis, taco seasoning, and water. Stir to combine
  • Reduce stove heat to medium and cook for an additional 5-7 minutes until most of the water is absorbed. Stir occasionally

To assemble Totchos

  • If you are using shredded cheese then we suggest placing the cheese over the cooked tater tots and placing them under the broiler for 1-2 minutes to melt the cheese.
  • Scoop your desired amount of tater tots onto a plate or bowl. Top with ground beef and drizzle queso dip over top (if using). Continue adding remaining toppings of choice
  • Enjoy!

Taco Seasoning

  • Mix all ingredients together in a small bowl
  • Can be stored in a resealable bag or airtight container for 3-6 months
