Jalapeno Lime Vinaigrette
This is a dressing that packs a punch. The citrus from the lime compliments the spice of the jalapeno and is brightened by the cilantro. It's perfect for salads or meat marinades.

Ingredients
- 1/2 cup avocado oil
- 1/2 cup light olive oil
- Juice from 2 limes, roughly 2-3 TBSP
- 2 jalapenos, veined, deseeded, and roughly chopped
- 2 cloves garlic, minced
- 2 cups cilantro
- 2 tbsp red wine vinegar
- 1/2 tsp salt
- 1 tsp granulated garlic
- 1 tsp honey
Instructions
- Add lime juice, red wine vinegar, garlic, jalapenos, cilantro, granulated garlic, and salt to a wide mouth mason jar and blend with an immersion blender until pureed. Alternatively, you can do this in a blender
- Add honey and blend for 10-15 seconds
- With the immersion blender running on low, slowly add the oil and and blend for an additional 30 seconds until fully incorporated
- Store in an airtight jar in the refrigerator for up to 1 week. Shake before serving.
